Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses.
In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organisations for a variety of functions.
You will :
oversee the day-to-day operations of Chinese Restaurant in Happy Valley Clubhouse including staff rostering, training, daily administration, and budget control.
prepare annual budget for property work, operational equipment and manpower.
manage and develop the restaurant's business by leading a team to provide the highest standard of personalized service to our Members including making recommendations on food and wine, responding to Members' requests, comments and suggestions.
monitor and enhance food and beverage services and facilities, and the optimum staffing level to achieve high satisfaction for the Members and their guests.
supervise that the required mise-en-place is done properly and ensure that the tableware and consumable items are in high sanitation and adequate for smooth operations.
train and coach for all team members to achieve continuous improvement and help new colleagues aligning with the Club’s culture.
perform any other related duties as and when assigned by supervisor.
work closely with kitchen team and proactively driving the service to plan and execute menus, events, marketing plans and promotions such as wine dinners, invited guest chefs promotions for our discerning Members.
coordinate and execute various clubwide programs with other Business Units including the annual wine dinner plan, guest chef promotions, festival goodies counters and take-away food & beverage sales.
work with Procurement and Membership Marketing teams to source and promote food & beverage products, operating equipment for events and services.
monitor, evaluate and reinforce the clubs HACCP system by continuous monitoring work practices and processes, with periodic re-certification audits.
You should have :
at least 6 years’ relevant experience in same capacity of a sizeable luxury hotel, members’ club or a highly recognized Chinese Cuisine of catering group with a minimum of 3 years’ experience in similar capacity
a proven record in operating a sizeable and luxury Chinese Cuisine with high quality service
good leadership skills with strong initiatives to interact with customers
good communication skills in both English and Chinese
hands-on experience of MS Office applications
